Matcha tea

Matcha is a high quality Japanese green tea powder. Before the tea leaves are harvested, they are shaded, limiting sun access by up to 95%. This results in slower leaf growth and thus more concentrated amino acid (L-theanine) formation giving the leaves a natural sweetness. After harvesting, the tea leaves are treated by stripping them of veins and stalks and ground in granite mills into an extremely fine powder.
