Mate is a herbal infusion made from the dried, chopped leaves of Ilex paraguariensis, a South American plant; it may also include pieces of young stems. Mate naturally contains caffeine. Processing and the ingredients in a blend influence the drink’s flavour and aroma, so compare the ingredients and tasting notes when choosing.
Brewing
Mate can be prepared in a teapot with an infuser or in a traditional gourd, using a bombilla — a drinking straw with a filter. Follow the product’s recommendations for the amount of mate, water temperature and steeping time for your chosen method. The method also affects the strength of the drink.
Storage
