Pu Erh Tea

Traditionally, Pu-erh tea is made from the leaves of ancient, wild tea trees, selecting specific broad-leaved varieties found in southwestern China. The buds and young leaves of these trees are larger than those of other tea varieties and are covered in fine, white down. Since there are not many such ancient trees, most Pu-erh teas are made by blending leaves from different regions, but tea connoisseurs are increasingly preferring tea that is harvested and processed in one specific region (the so-called Single Origin tea).

Interestingly, in China, where fully oxidized tea (the black tea we are used to) is called red, Pu-erh is classified as a true black or post-fermented tea.
