After harvesting in the Karnataka region, the green Arabica beans are exposed to the moisture-laden monsoon winds under open shelters on the Malabar coast during May and June. This natural exposure causes the beans to swell, turn a distinctive pale gold, and develop an incredibly deep and sweet flavor profile.
