Terroir:
Malabar or Malabar coast is a region located on the south west coast of the Indian peninsula. The farms are located between 1000m and 1500m altitude and enjoy abundant rainfall of between 120-140 rainy days per year. The influence of maritime moisture-laden monsoon winds ensures an average temperature of 27 give all the typicity to this coffee. These salty winds also stop the development of mildew on the cherries. The monsooned process consists of exposing natural coffees for several days to these winds, then exposing non-full bags in rows with sufficient space between them so that the monsoon winds are constant and uniform. Within 6-7 weeks the coffee changes colour and becomes golden yellow: it is then completely monsooned!
